... you have almost certainly entered the Perauer gourmet temple: A place where the wonderful scent of grilled, flambéed and roasted delights flow through the awe-inspiring walls of our traditional parlours (the Metzgerstube parlour is over 300 years old!) and guests can’t stuff their faces enough - from sophisticated dishes to exquisite drops of wine from near and far... Our chef conjures up dishes from Tyrol and sometimes the whole world with instinctive feel, lots of love, the best produce from the mountains and, of course, an exceptional team. Whatever he cooks - traditional classics from the hotel’s own butcher’s, seasonal highlights, international specialities, vegetarian delights and sweet treats - it tastes fantastic (and that doesn’t just come from us; our regular guests say it too).

There’s nothing better than the fresh and succulent meat of the happy pigs, lambs and cows which live a fulfilled life with our Zillertal farmers before they ultimately land on the table of our master butcher, Hans. These high quality products from the hotel’s own butcher form the basis for our excellent renowned traditional and international cuisine. Of course, we can also meet dietary requirements... And we have something special in store for vegetarians too.

The Butcher Bar

What does the butcher do when he has time off? - Hang out!
... and in the best sense of the word: At our brand-new THE BUTCHER BAR , guests can chill out in style - as can the meat ;-). And who felt their stomach rumble when they saw our dry ager? – Have no fear - alongside the hotel’s own beer, refined , fantastic wines, sensational cocktails, exquisite grappas and sparkling wines and champagnes, our butcher - or rather barman - also serves up a ‘daily secret’ each day from our butchery along with various antipasti. A cult popcorn machine has even found its way into the new hotel bar which, by the way, is also open to non-hotel guests (in winter) between 16.00 and 1.00 daily. Unique challenge: to make it past our guard dog SPIKE (whose similar name to our landlord is pure coincidence) and who (just like our manager) is actually a sweet-natured fellow ;-) So come on by and hang out!

For something special

... but there is also a beautiful, renovated GOURMET ROOM which can be reserved for cosy gatherings (max. 10 people). Virtually ‘closed’; for private get-togethers. There are always opportunities to chat (and eat and drink wine!)... Some stories are not for all to hear ;-). For those who want to sample a new culinary experience in the new Gourmet Room, we can import the biggest steak in the world, on request - just for you! The approx. 2 kg Chianina beef T-bone steak: the Bistecca alla Fiorentina is also available exclusively for guests of the new Gourmet Room and, of course, by advance request only.
